Oven Baked Chicken Chunks

Tonight’s dinner was supposed to be a simple chicken in ABC Sweet Soy Sauce the way our maid does it and instead of doing the same and taking the easy way out, I ended up elaborating dinner and ended up with an unnecessarily complex dinner. With that, I present to you an oven baked chicken chunks with lots of onions, potatoes, garlic, baby carrots and mushrooms. The kids seemed to enjoy the chicken, which is little surprising considering statistics show kids in general will pick chicken over vegies. [Gallery]

    Many thanks for visiting. It’s great to hear from you especially when I’ve just returned from a week Japan and missing it big time. I would love to hear more about your stay in Shizuoka and your thoughts about living there, from a foreigner’s perspective, assuming you’ve stayed long enough to know everything there is to know about this wonderful country.

    I visited shizuokagourmet.wordpress.com and you’ve got a lot of Japanese content. My wife and I love Japanese food and it appears that I love it even more considering I take the extra step to actually cook it too. My curiousity of Japanese culture and cuisine goes way back to 1989 in Black Rain, the movie by Michael Douglas, Andy Garcia, Ken Takakura, Kate Capshaw and Yusaku Matsuda. My fascination for Japanese Cha Soba began here, if you recall one of the scenes where Michael makes slurpy noises eating a bowl of soba noddles.

    I’ve lived in Shizuoka for 31 years now and still enjoys it! I thought it was about grand time I shared my pleasure!
    I’m a lecturer (although I’m finally thinking of moving into another field) and have time to go around!
    Talking of soba, I will visit some place in Shimada soon where there is a famous soba shop which also serves great sake. I’m pretty sure they serve cha soba. Will make sure to post it!

    31 years in a foreign land is a long time by any standards. I hope one day I would be able to do the same with my family and Japan would be one of those uniquely interesting countries on my list. I have been in the workforce for 16 years and only became a freelance professional photographer for 3 years.

    Famous Soba in SHIMada … looks like it’s got my name written all over it. I don’t know when I’ll get a chance to visit Japan again but if and when I do, I’ll make sure to look you up.
